COOLER
The
wort is pumped through the Cooler where it is cooled from 200° F to
approximately 50° F in a fall over the plates of 6'. The cooling agents
used are water and ammonia circulating through the plates of the Cooler.
The yeast is added (pitched) at the bottom of the Cooler through sanitary
lines directly from the Yeast Cellar. The wort is then pumped over to
the Fermenting Tanks, where the fermentation begins. The fermentation
process lasts approcimately 7 days.
LABORATORY
This
may be called the "Heart" of the Brewery from the standpoint
of insuring that every brew will meet the high standards of quality control
required in making the finest beer brewed in the world and to meet the
high standards required for it to be approved by the United States Testing
Company as CERTIFIED BEER. This Laboratory is one of the newest and most
complete of all brewing laboratories and is fully capable of making any
tests necessary in production of beer and quality control.
