AGEING
CELLAR
At
the end of the fermentation the beer is then pumped into 1000 Bbl. capacity
glass lined tanks in the Ageing Cellar. Here the temperature is held at
32°F during the ageing period. The proper ageing is determined by
the laboratory through constant testing. The beer is then passed through
constant testing. The beer is then passed through earth filters which
will remove any yeast cells which did not settle out during ageing. From
here the beer goes to the Finishing Tanks where final processing is accomplished.
The beer is now ready for bottling, canning or kegging.
BOTTLE
SOAKER
As
the empty beer bottle cases move along the Conveyor to the Soaker they
are opened and inspected from broken bottles. The bottles then go to an
automatic unpacker. The bottles then move through several compartments
of hot caustic solution which will remove any foreign matter inside or
outside the bottle then through a rinsing tank to remove all traces of
the caustic.
